Wow. I guess the question is what you mean by 'Growing up'. I've never stopped watching cartoons completely and I've been grown up for 23 years! From my actual childhood, though, I did have some favorites. Absolute on top would be the original G1 Transformers. While it is showing its age, it still stands as a quality series up until today (probably helps that the last season had a lot of science fiction ideas attached). The other big one would be Bugs Bunny. It was on every Saturday for my entire childhood and my face was glued to the screen. Other runners up would be The Smurfs, Scooby Doo, and almost everything that had a super hero attached.
If we included my adulthood, there is actually too much to list. I'd have to add Animaniacs, Darkwing Duck, Batman the Animated Series, and Justice League to my faves. Since CB mentioned anime, I will too since I am a huge fan. Original Dragonball, Cowboy Bebop, and FLCL I agree with (have all of them on dvd). also a little gem of a series called Record of Lodoss War. As far as today, there is only one cartoon series I really enjoy, Phineas and Ferb. I did like Foster's Home for Imaginary Friends too, but they aren't making new episodes of that. Both of those series are chaotic but they aren't just dumb. There are a lot of good jokes in there.
Anyway, that is mine in the short form. I could have a much larger list if I wanted to.
